In Between is a music track that is unlocked in the Arzinian Mine. The mine is visited during the Between a Rock... quest, however, it must be revisited after the quest to unlock this track.
The quickest way to unlock this track is to make a gold helmet and use a ring of wealth to teleport to Dondakan's rock. Speak to Dondakan whilst wearing the helmet and ask to visit the mines again.
